Our enzyme technology for the integrated management of filtration plants and bottling lines has simplified and economised processing methods in the winery.
It is well known that the protein and colloidal phases of products, especially in certain particular vintages, lead to clogging, sometimes irreversible, of the final microfiltration membranes in bottling.
Obviously, at the end of the process, various heterogeneous substances such as protein phases, polysaccharides, pectins, polymerised phenolic fractions and glucidic colloid protectors must be removed from the septa.
These strong clogging agents, although located on the outside of membranes, tend to penetrate the ‘sponge’ of polymeric septa or the coating layers of ceramics and are difficult to remove completely.
Usual washing protocols involve caustics, acids and peroxides.
In the definition of new approaches to the cleaning of organic phases, given the need for greater effectiveness on proteins and collodions and greater sustainability, innovation today passes from enology-specific enzyme cocktails, which act by hydrolysis on the substances mentioned above.

Biofilm is a constant source of contamination, created by an accumulation of bacteria and yeasts that develop a protective matrix consisting of organic polymers (EPS): polysaccharides, proteins, DNA, lipids, etc…
This organic matrix is very difficult or even impossible to remove using conventional cleaning methods and usual disinfection protocols.
