Microbiologically pure beers

Producing good, ‘microbiologically pure’ and stable beers over time is greatly simplified by filtration and pasteurisation procedures.

In the production of ‘craft beers’ (unfiltered and unpasteurised), on the other hand, these aspects are still critical today, and contamination problems in beer are very frequent and caused primarily by incorrect operational and hygienic practices.

Lactic acid bacteria (Lactobacillus brevis, L. lindneri and P.damnosus) are responsible for 70-80% of beer contamination, which together with the gram bacteria Pectinatus spp. and Megaspherae spp. represent the most significant group of beer contaminants.

The NBB® line comprising NBB®-A Agar, NBB®-B Broth and NBB®-C represents Dohler’s revolutionary product line for microbiological contaminant control for the beer and beverage industry.

This new system eliminates the time and high cost of sample preparation compared to conventional microbiological analysis, not to mention the frequent possibility of contamination of the medium itself.

The ease of use of the system is such that it allows any brewer, even homebrewers, microbiological control of beer at all stages of production.

This is because the system uses a series of liquid media for microbial growth with a specific colour indicator that changes colour in the presence of microbial growth, thus making it possible to identify contamination even by simply observing the test tube.

NBB®-B-Am tubes

NBB®-B-Am is a broth culture medium, in vials, for the rapid and qualitative determination of biofilm-producing indicator microorganisms, especially lactic and acetic, but as it is not selective it also allows the growth of yeasts and other general microorganisms such as bacilli, clostridia, enterobacteriaceae, micrococci and Klebsiella.

With this medium, it is possible to determine the significant presence of these indicator micro-organisms simply by observing the turbidity and colour of the tube, which will turn yellow and turbid in the presence of contaminants.

NBB®-B-Am is therefore an excellent method of environmental and general hygiene control.

By using appropriate swabs, it is possible to assess the presence of indicator m.o. at all points in the process and thus be sure of an optimal level of hygiene.

NBB®-B-tubes

NBB®-B-tubes is the ideal ready-to-use tube substrate for the identification and qualitative determination of beer-specific contaminating bacteria, in particular the medium has aptitude for the development of: Lactic Bacteria (Lactobacillus brevis, L.lindneri and P.damnosus), Pectinatus spp. and Megasphera spp.

The analysis is easily performed by placing 0.5-1 ml of yeast or unfiltered beer inside the test tube in sterile conditions.

NBB®-C

NBB®-C is a concentrated culture medium available in 250 ml bottles ready for use ideal for the identification and qualitative determination of beer-specific contaminating bacteria, in particular the medium has aptitude in the development of: Lactic Bacteria (Lactobacillus brevis, L.lindneri and P.damnosus), Pectinatus spp. and Megasphera spp.

The analysis is easily performed by placing 5% NBB®-C medium directly into our sample of: finished beer/fermenting beer/yeast.

LMC

LMC (lactose-multi-concentrate) is a rapid and qualitative medium for the analysis of E.coli and Coliforms in water.

Excellent for periodic testing of the microbial condition of brewery water.

To perform the analysis, simply insert 250 ml of water directly into the bottle.
